Chicken Pesto

Serve w/rice or pasta.


  • 4 chicken breast halves
  • 3 C chopped veggies (broccoli, zucchini, carrots, peppers....)
  • 1/4 C DiGorno Basil Pesto Sauce
  • 1/4 C water
  • 1/2 C mozzarella


Cook chicken. I cut it into chunks and stir-fry it for about 4-5 minutes or you can keep it whole and cook it about 5 minutes on each side. Add veggies (I continue to stir-fry the veggies for a couple minutes), pesto sauce, and water. Bring to boil, turn down heat & cook 6-8 minutes. Sprinkle w/cheese. Let stand a few minutes for sauce to thicken and cheese to melt.
