Chicken and Dumplings

I double this to serve my family of 7, with leftovers.
Very fast if you use the canned soup and bisquick


  • 1. 1 1/2 cups milk**
  • 2. 1 can cream of chicken soup**
  • **or two cups strong chicken broth and 1cup cream or milk-
  • if you substitute, then you may thicken it with a little
  • cornstarch and cold water**
  • 3. 1 cup small veggies, like peas and carrots
  • 4. 1 cup cooked and cut chicken (or more if you want more meat)
  • Dumplings:
  • 5. 1 cup bisquick#
  • 6. 1/3 cup milk#
  • #or 1 cup flour,
  • 1 t baking powder
  • 3/4 t salt,
  • 2 egg yolks,
  • 1/3 cup milk#
  • Cast iron chicken fryer (or equivalent size) with lid


Whisk 1 and 2 together in pot.
Add chicken and vegetables.
Bring to slow boil.
Mix dumplings (dry, then wet, stir until just moistened)
Drop eight dumplings onto top of chicken mixture.
Turn to low heat.
Cook uncovered 10 minutes, cover, cook 10 minutes longer.
Serve with a green salad and homemade applesauce for desert.
