Grilled Chicken Fajitas

This is a fabulous recipe... I suggest making a double batch and using the leftover for lunches or in salads.
My family doesn't care for the cooked peppers and onions... we stick to salsa, cheddar and sour cream.

Ingredients

  • 2 tbsp of white wine vinegar (I usually use regular vinegar)
  • 2 tbsp lime juice
  • 1 tbsp vegetable oil
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chopped onion
  • 1 garlic clove, minced
  • 1/2 tsp salt (optional)
  • 1/2 tsp dried oregano
  • 1/4 tsp cumin
  • 1 lb boneless, skinless chicken breasts
  • vegetable oil
  • 1 medium green pepper, halved and seeded
  • 1 medium sweet red pepper, halved and seeded
  • 1 medium sweet onion, sliced
  • flour tortillas
  • salsa, guacamole, sour cream, and shredded cheddar

Directions

In a large resealable plastic bag or other container, combine vinegar, lime juice, oil, Worcestershire sauce, onion, garlic, salt, oregano and cumin. Add chicken. Marinate at least 4 hours. Drain and discard marinate.
Lightly oil vegetables (if you choose to prepar them). Grill chicken and vegetables, uncovered over medium heat for 12 to 15 minutes, or until vegetables are soft and juices from chicken run clear.
Warm tortillas according to package directions.
Quickly slice chicken and peppers into strips and separate onions into rings. Spoon chicken and vegetables down the center of a torilla...Add additional condiments as desired.
