Mexican Chicken

This is one of the few dishes my husband will actually request!


  • 4 to 6 chicken breasts
  • 1 can of chicken broth ( I use the broth from the chicken when cooked.)
  • 1 can of cream of celery soup
  • 1 can of cream of chicken soup
  • 1 4 oz. can of green chilies
  • 1 lb. grated cheddar cheese
  • 1 large onion chopped
  • 1 large package of plain doritos crushed ( I use the cheese ones)


Cook chicken in oven uncovered in a pan of a small amount of water for about 50 minutes at 400 degrees.
Take out of pan and cool.
Brown onion in 2-3 tablespoons of margarine. Take off heat and add all 3 soups. Add chilies and mix well.
In 9 X 13 pan, make a layer of crumbled doritoes, layer of chicken cubes, layer of cheese and a layer of soup mixture.
Repeat layering until all ingredients are used. I try to end up with doritos on top.
Bake at 350 degrees for 30 minutes.
