Sicilian Chicken

Ingredients

• 1/2 lb Italian sausage-sliced
• 1 T olive oil
• 3 1/2-4 lb chicken
• 1/2 C water-hot
• 2 cloves garlic
• 1 t chicken bouillon
• 1/2 t salt
• 1/4 t basil
• 1/4 t black pepper
• 2 medium onions
• 2 medium peppers
• 2 medium tomatoes

Directions

Preheat oven to 350.
Sautee sausage in oil.
Brown chicken and drain.
Add sausage, water, garlic, bouillon, salt, pepper & basil. Cover & bake 45 minutes. Chop or chunk veggies.
Add onions, peppers, & tomatoes. Cover & bake another 10-15 minutes.

*If you use boneless chicken, it requires less baking time.
