Mexican Seafood Cocktail. This
is the whole meal.
Wonderful for summer
Chop shrimp-if cooked add juice of 2-3
limes and some salt let sit in fridge 1 hr. *Add any other shellfish you
wish to add, I use canned*
If raw you can cook and then follow above or you can chop add lime, and some salt, let sit in fridge for 2-3 hrs.**The acid of the lime/lemon will cook the shrimp/seafood**
Dice onion and let sit in lime juice about 5 min. It will settle the flavor.
Dice all veggies. Add lemon/lime juice also to veggies. Let sit at least 15 min.
Serve with corn chips, or saltines. You could fry your own I happen to like Frito Scoops much stronger*
You can omit the V-8 if you want. It will no longer be a cocktail, but a salad.
You can very easily double or make less.
