Rachels Granola

We use this for cereal in the morning sometimes, but mostly we just snack on it. The orginal recipe is just slightly different. I just put down what I used.

Ingredients

  • Heat in large saucepan until blended well:
  • 1 c. butter
  • 1 c. light olive oil
  • 1 c. Sucanat
  • 1/2 c. maple syrup
  • 1 c. honey (I have left out the honey and used 1/2 t. liquid Stevita Stevia in it's place)
  • 1 c. milk, milk substitute or water
  • 2 T. vanilla
  • In a large bowl combine:
  • 10 c. oats, rolled
  • 2 c. whole grain flour
  • 1 c. dry milk powder
  • 1 c. chopped pecans
  • 1 c. chopped walnuts
  • 1 c. slivered almonds
  • 2 c. dried coconut unsweetened
  • 1 c. raw sunflower seeds
  • 2 T. cinnamon

Directions

Pour heated liquid ingredients over the well-mixed dry ingredients.
Add liquid three times, mixing well each time. When all liquid is incorporated, spread granola on parchment paper lined dehydrator trays and dry 6 8 hours or overnight at 115 degrees. Store in refrigerator or freezer.

Note: We add dried or fresh fruit at the table.

Yield: 8 pounds or 22 24 cups
