Avoca Taco

This recipe is from a homeschool friend. It makes enough to feed my family of 6 2-3 meals. Also freezes well!

Ingredients

  • Avoca Taco's
  • 2 lb. pintos (soak overnight)
  • 2 lb. pork roast (whatever is inexpensive)
  • 2 tsp. chili powder
  • 1 tsp. cumin (I always use more to taste)
  • 4 jalapeo peppers, chopped (I use a small can of chopped chili peppers)
  • 1 tsp. garlic powder
  • 1/2 tsp. oregano
  • 2 tsp liquid smoke (I omitted this as I am currently out)
  • salt to taste

Directions

I put roast & seasonings with water to cover in cropckpot, overnight, while I soak beans. In morning remove roast and add drained beans to broth in crockpot.
When roast is cool, shred and add back to crockpot with beans. Add water to make soupy if necessary & adjust seasonings as desired.
Serve over tortilla chips or Frito's. Layer chips, meat/bean mixture, lettuce tomatoes, olives, onions, cheese, sr. cream, guacamole, etc. "Build your own taco Sunday"
