Bean Burritos

Can be used as bean dip or wrapped in tortillas for burritos.

Ingredients

  • 1 15 ounce can Pinto Beans - drained
  • 1 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • 7 or 8 jalapeo slices
  • 4-6 ounces of sharp cheddar cheese
  • Flour tortillas - taco size

Directions

Remove tortillas from refrigerator. In a food processor, blend the beans, cumin, chili powder, jalapeos, cheese. Pour into a microwave oven safe container (1 quart to 1 1/2 quart sized container). Microwave for 2 minutes on 75% power or 7th power, stir, microwave for 2 minutes on 75% power or 7th power, stir, 2 minutes on 75% power or 7th power, stir.. Do this until the bean mixture is bubbly. It usually takes from 6 to 8 minutes altogether. Remove from microwave. On each tortilla place about 3 tablespoons of bean mixture in a wiener shape. Roll up and set aside, fill tortilla till bean mixture is used up. Leftovers can be wrap and refrigerated. Any unused bean filling can be used as bean dip.
