Black Beans

This is a good dish for anything calling for seasoned black beans. We like this as a side dish with cheese or served over rice. We also serve this with homemade cornbread. The recipe calls for 2 pounds of dried black beans, prepared and cooked; use the quick soak, overnight soak, or crockpot method. 2 pounds of dried beans = 12 cups of cooked beans.

Ingredients

  • 2 pounds dry black beans
  • 3 -3 1/2 quarts of water as needed
  • 1/4 cup olive oil
  • 2 medium onion, chopped
  • 2 green peppers, diced
  • 4 cloves garlic, minced
  • 1/2 cup red wine vinegar
  • 1/4 cup honey
  • 1 tsp ground cumin seed
  • salt to taste (1 TB)

Directions

1. Prepare and cook beans in water. When done drain beans and set aside.
2. Saut onions, garlic and pepper in oil until tender.
3. Add vegetables and remaining ingredients to the beans; continue cooking for 20 minutes.
