Frijoles Rancheros Rancher's Beans

These are my fav.


  • Cooked Beans--Normally Pinto but you can use what you like.
  • Beacon
  • Tomato
  • Onion
  • Jalapeno


Chop beacon, onion, tomato, jalapeno or any other chile you may have on hand.
Fry beacon in a skillet. Drain off most of the oil. If you drain off all of the oil you will need to replace it with a small amount of veg/carn/olive oil.
Add tomato, onion, chile fry until tender add your beans bring to a boil.
Left overs are even yummier----just warm.
