Vietnam Fried Rice

This is a great recipe to use leftover rice and veggies.


  • 4 TB cooking oil
  • 1/4 to 1/2 cups cooked meat (chicken, beef or pork)
  • 3 cloves of garlic, minced
  • 1 large onion, chopped coarsely
  • 1 t. salt
  • 1 t. pepper
  • 1 t. sugar
  • 1 TB soy sauce
  • 3 cups cooked brown rice
  • 1 cup leftover or frozen vegetables, such as peas, green beans, carrots
  • 2 eggs, beaten


Heat in skillet the cooking oil, add in all ingredients except rice and eggs. Stir-fry until meat is tender and hot, about 1-2 minutes.
Add in the 3 cups of rice and stir-fry 5 minutes. Add frozen/leftover vegetables and stir well into rice-meat mixture.
Just before serving add the 2 beaten eggs. Over medium heat, stir carefully through rice until eggs are cooked. Serve piping hot with a salad.
