Carne Asada

A very famous way of cooking meat in Mexico and used in a variety of ways.

Ingredients

  • 2 pound of beef (the best cut you can afford-I have used Tenderloin, London broil, Bottom Round)
  • Look for a piece that doesn't have a lot of gristle.
  • Limes
  • Salt and Pepper

Directions

Slice as thinly as possible.
Marinate in lime juice, salt and pepper for about an hour.
Cook on a hot grill or pan until done.
Hint: I have noticed that if you let the meat marinate in the lime, and salt, it will dry too much while cooking. I add salt, and lime at the end of cooking.
You can serve this as is with Mexican rice and beans or salad, or you may cut into strips and serve as fijitas. Chop it and put into burritos.
