Hearty Vegetable Soup

I put the ingredients in at night, cooked on low, add veges in the morning and continue to cook on low. Ready by the time we get home from church.
Frances' Hearty Vegetable Soup From: Fix-It and Forget-It, page 27


  • 1 lb. round steak, cut into 1/2 in. cubes
  • 14 1/2 oz, can of diced tomatoes
  • 3 cups of water
  • 2 potatoes, peeled and cubed. (I am using red potatoes, skins on)
  • 2 onions, sliced
  • 3 celery ribs, sliced (oops, don't have these)
  • 2 carrots, sliced
  • 3 beef bouillon cubes (I use Better than Bouillon)
  • 1/2 tsp dried basil
  • 1/2 tsp. dried oregano
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups frozen mixed veges. (I am using fresh green beans and fresh corn)


Combine first 3 ingredients in slow cooker, cover and cook on high 6 hours. Add remaining ingredients, cover and cook another 2 hours on high.
