Applesauce Muffins

These are so yummy! They don't sound exciting, but are very tasty! It's a full fat version but I put my modifications at the end.

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup applesauce
  • 1/2 cup raisins (optional)

Directions

In a mixing bowl, cream butter and sugar. Add eggs one at a time, beating well after each addition. Combine dry ingredients; add to the creamed mixture alternately with applesauce. Mix just until combines. Fill greased or paper lined muffin cups two thirds full. Bake at 350' for 20 to 25 minutes. Cool in pans for 5 minutes before removing to wire rack to cool completely.

Yield: about 1 1/2 dozen

Low Fat Version: I have replaced the butter with an equal amount of oil replacer. I also reduced the sugar to 3/4 cups with no problems.

Exchanges: Low Fat Version with raisins : 1 muffin= 1/2 bread, 1/4 fruit
