Cinnamon Raisin Bread

This recipe is adapted for a Kitchenaid mixer

Ingredients

  • 1/2 cup low-fat milk
  • 3 TBS sugar
  • 2 TSP salt
  • 3/4 cup brown sugar
  • 1 cup raisins
  • 4 TBS cinnamon
  • 3 TBS butter or margarine
  • 2 PKG active dry yeast
  • 1 1/2 cups warm water...(105* to 115*)
  • 5-6 cups whole wheat bread flour...(white flour works well too.)

Directions

Place mile, sugar, salt, and butter in small saucepan. Heat over low heat until butter melts and sugar dissolves. Cool to lukewarm.
Dissolve yeast in warm water in warmed mixer bowl. Add lukewarm milk mixture and 4 1/2 cups flour. Using dough hook, mix at speed 2 about one minute.
Mix raisins, brown sugar, and cinnamon together in a bowl, then add to dough. Continue mixing on speed 2 adding remainder of flour 1/2 cup at a time until dough pulls from sides of bowl. Mix for 2 more minutes.
Place dough in greased bowl, turning to grease top. Cover. Let rise in warm place, free from draft about 1 hour or until double in bulk.
Punch dough down and divide in half. Shape each half into loaf and place in greased baking pans. Cover, let rise in warm place, free from draft, about 1 hour or until double in bulk.
Bake at 400* for 30 minutes or until golden brown.
