This is a sweet conebread and it
rises nicely. I bake mine in a round 8" stone pan. No matter how much
I oil it, the conebread sticks.
1 cup buttermilk
3 TB pure maple syrup or honey
2 TB olive oil
2 TB melted butter
2 cups fresh ground corn (I use white because that is all I have,
but I like yellow)
2 tsp baking powder
1 tsp salt
Blend together the first five ingredients
in order given in a 2 cup measuring cup.
Thoroughly blend dry ingredients in a separate bowl.
Blend liquid ingredients into dry ingredients with a wire whisk just until
Pour into greased pan (8" square or round): bake at 350 degrees for
25-30 minutes or until knife comes out clean.
