Fried Cornbread

The longer you fry this, the crispier it gets.
If you want more of a soft inside, do not fry as long.
These taste good cold, also.
Rated moderate because it varies as to how much water you will need and how long it takes to fry it up.
You need to eyeball it.

Ingredients

  • 1 cup cornmeal
  • 2 TBsp flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 TBsp sugar
  • Boiling water
  • 3or4 TBsp melted bacon drippings
  • Crisco oil to fry it in.

Directions

Mix the first FIVE items.
Add enough BOILING WATER to mix well. It needs to be just enough to make it mix well. Better to have too little than too much here.
Add the melted bacon drippings. Stir well.
Drop by spoonfuls into hot Crisco. Brown on one side, turn, and brown on the other side.
Drain on paper towels or a paper plate, and salt.
