Green Pizza dough

Makes 4-5 pizzas depending on size and thickness.



  • 10 oz. frozen spinach, cooked & pureed
  • 1 TBS honey or sucanat
  • 1 TBS sea salt
  • 1 TBS extra virgin olive oil
  • 3 cups warm water (use part to puree the spinach)
  • 6-8 c ww flour
  • 1/4 c vital wheat gluten
  • 1 1/2 TBS yeast


Mix in Bosch first 5 ingredients, add 5 cups flour and 1/4 cup gluten, then yeast. Add enough extra flour to get a good sturdy dough. Knead 5 minutes.

You can allow to rise for a while or begin to roll out and top as desired right away.

For thin crust, right away is fine, for thicker, chewier crust you'll want to let it rise a while. Bake at 450 deg for about 10-12 minutes or to desired crispness.

You could also prebake the crusts for 5 minutes or so and then either freeze for later use or top and proceed to bake.
