San Francisco-Style Sourdough Bread

Ingredients

  • 1 teaspoon active dry yeast
  • 1 1/2 cups sourdough starter
  • 1/4 cup milk
  • 1 tablespoon sugar
  • 3 cups bread flour
  • 3/4 teaspoon salt
  • cornmeal

Directions

Combine the first 4 ingredients in a mixing bowl. Gently warm by placing the mixing bowl in hot water (do not microwave). When the yeast has dissolved and is a little puffy add the flour and salt. Either mix by hand or use your mixer and dough hook. knead until soft and smooth (for about 7-10 minutes). Let rise for about an hour in a warm place. Punch down dough and shape into a loaf. Lightly grease a loaf pan with butter or olive oil and sprinkle cornmeal into the pan. Shake the pan a bit to distribute the cornmeal. Put the shaped dough in the loaf pan. Let rise in a warm place for 30 - 45 minutes. Brush top with water and bake at 375 for 30 - 40 minutes or until the loaf sounds hollow when tapped. Remove from oven; cool on wire rack.
