Six Week Muffins (Hospitality Muffins)

This recipe has been called two things...Six Week Muffins and Hospitality Muffins. You can make the rather large batch ahead and keep in your fridge for up to six weeks. The other reason why they are called Hospitality Muffins is that if you know company is coming over you can quickly pop a batch in the oven and serve when your guests arrive. The children and I use them for our 4 pm tea/coffee break.

Ingredients

  • 1 box (10 oz) raisin bran or All Bran cereal
  • 1 cup oil
  • 3 cups sugar
  • 4 eggs, beaten
  • 1 quart buttermilk
  • 5 cups flour
  • 5 teaspoons baking soda
  • 2 teaspoons salt
  • (Out of buttermilk? Add 1 teaspoon distilled white vinegar to 1 cup of milk and let sour for 5 minutes)

Directions

Mix in a giant size mixing bowl, mixing well. Store, covered in the refrigerator and use as desired. Keeps 6 weeks. Do not stir when putting in muffin tins. Bake at 400* for 20 - 25 minutes or until brown.
