Whole Wheat Muffins

Ideally, you will grind your own fresh flour.


  • 2 1/4 C whole wheat flour
  • 1 tsp salt (I use less)
  • 1 tsp soda
  • 1 tsp baking powder
  • 1 C buttermilk (buttermilk powder & water works well, too)
  • 1 egg
  • 1/2 C oil
  • 1/2 C honey (I prefer a strong flavored honey like wildflower)
  • Add-ins: 1 cup of fresh fruit such as blueberries, peaches, apple or 2-3 mashed bananas. Add add'l spices to your taste: 1 tsp cinnamon, 1 to 1/2 tsp nutmeg, a little maple syrup


Measure dry ingredients into mixing bowl. Add liquids and mix just until well blended. Drop by spoonfuls into greased muffin tins. Bake at 400 for 15 minutes.
