Barbecued Beef Sandwiches

Makes 10 to 12 servings.

Ingredients

  • 2 1/2 to 3 lb. lean boneless chuck roast
  • 3/4 cup tomato ketchup
  • 1 TB Dijon-style mustard
  • 2 TB brown sugar
  • 1 garlic clove, crushed
  • 1 TB Worcestershire sauce
  • 2 TB red-wine vinegar
  • 1/4 tsp liquid-smoke flavoring (I won't use this)
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 10 to 12 French rolls or sandwich buns

Directions

1. Place beef in slow cooker. Combine remaining ingredients, except rolls. Pour over meat. Cover and cook on LOW 8 to 9 hours.

2. Refrigerate or prepare sandwiches now. Shred beef by pulling it apart with 2 forks; add 1 cup sauce. Reheat mixture in microwave or on stovetop.

3. Spoon on warm, open-face rolls or buns. Top with additional warm sauce, if desired.
