Hearty Pork Stew

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 1/2 lbs pork boneless loin roast, cut into 1" cubes
  • 3 medium carrots, cut into 1/4" slices (1 1/2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cups 1/2" cubes peeled parsnips
  • 1 1/2 cups 1" cubes peeled butternut squash
  • 4 cups chicken broth
  • 1 Tbsp. chopped fresh or 1 tsp. dried sage leaves
  • 2 tsp. chopped fresh or 3/4 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 Tbsp. flour
  • 3 Tbsp. butter or margarine, softened

Directions

Heat oil in 10" skillet over medium heat. Cook pork in oil for 6-8 minutes, stirring occasionally, until browned on all sides. Mix pork and remaining ingredients except flour and butter in at least a 3 quart crock pot. Cover and cook on low heat setting for 6-7 hours. Mix flour and butter; gradually stir into stew until blended. Increase heat setting to high. Cover and cook 30-45 minutes, stirring occasionally, until thickened.
