Phillipino Chicken legs

I learned this when living in Japan from a Phillipino lady. It has been a family favorite for 28 years.

Ingredients

  • 12 chicken legs (just to have a base amount serves 6)
  • 2 carrots grated and 6 cut in stew chunks
  • 6 red potatoes cut in stew chunks
  • One onion minced 1/4 inch
  • Olive oil
  • 1/3 cup soy sauce
  • 1/4 vinegar
  • 2 Tsp minced garlic
  • 2 Tblspn pickled ginger
  • Salt and pepper to taste
  • Water

Directions

Sear the chicken legs till brown and place in the crock pot
Then saute the grated carrot, minced garlic, and onion in the same pan with chicken bits. Place mixture into the pan.

Clean the bottom of your skillet with a bit of tap water to get the goodies off and pour into your crock.

Then add the potatoes and carrots and salt and pepper to taste.

Mix the vinegar, soy sauce with enough water to bring it to around a cup. Always keep your soy sauce and vinegar to these perportions if adding more liquid during cooking. Pour it over the chicken and set the crock for low for a day, high for a few hours.

When done the meat should melt off the bone and veggies be tender. I serve it with fried noodles.
