No-Bake Fruitcake

This is edible fruit cake and it has to be made around 4 weeks in advance.

Ingredients

  • 1/2 can of Pet Milk (evaporated milk - probably 1/2 of a large can - {one 5 oz can will do})
  • 20 Large marshmallows
  • 1 pound box of Graham Crackers --- Crush the graham crackers
  • 1 pound box of seedless raisins
  • 1 pound of shelled pecans
  • 1/2 pound of shelled walnuts
  • 1 jar of cherries (use the standard size jar 16 ounces - drained, (do not use candied fruit!!))
  • Optional ingredient: 1 tablespoon rum flavoring (Mom sometimes uses the flavoring and sometimes does not. It tastes good either way.)

Directions

Melt marshmallows in milk over low heat. Remove from heat. Stir in flavoring and the rest of the ingredients. PACK the fruit cake in a loaf pan. Invert the pan to dump out the loaf shaped fruit cake. Wrap in plastic wrap and then foil. Store the fruit cake in the refrigerator for 4 weeks before serving.
To serve, cut cake in thin slices around 1/4 inch thick. Keep leftover cake refrigerated.
