Peanut Brittle

Ingredients

  • 1 cup Dark Karo Syrup
  • 1 cup Sugar
  • 1 tsp Salt (level)
  • 1 tbsp Butter
  • 1 tsp Baking Soda (heaping) *wait
  • 2 cups Peanuts (unsalted & unroasted) *wait

Directions

Butter your cookie sheet and set aside.
In a 3 qt saucepan over high heat add sugar, salt, butter and syrup. STIR CONSTANTLY. When it comes to a boil, add peanuts. Turn heat to medium and add candy thermometer. STIR CONSTANTLY...DO NOT STOP STIRRING! As soon as the temperature reaches 300 degrees, add stir in baking soda. Remove from heat and pour onto buttered cookie sheet. DO NOT SPREAD. It will spread itself. Let stand 1 hour. Break apart.
Low humidity days make it less sticky.
*Note-You can substitute peanuts for cashews or other nuts.
