Chicken potatoes carrots casserole

This recipe is simple and easy to make. The first ingredient is chicken, but I did not list how much or what kind. Alot of times I just use left over chicken from the night before and sometimes I just bake a few breasts or what I have on hand. The point is as long as it is cooked, deboned and cut up, you are good to go. It may seem like alot of potatoes and carrots but I feed a large family so you could cut the recipe in half if you wanted to.

Ingredients

  • Chicken- how ever much you want- cooked, deboned and cut up
  • Potatoes about 5 pounds- peeled, and cut up
  • Carrots- about 2 pounds- cut up
  • Celery- about 3 stalks-diced
  • Onion-1 large diced
  • 2 cans cream of mushroom soup
  • 2 cups milk
  • Butter- about 2 TBSP.
  • Salt and Pepper to taste

Directions

Melt butter in a pan and saut celery and onions. When it is finished add the cream of mushroom soup and milk until well combined. Combined all ingredients in a large casserole dish. Bake at 400 degrees for about 1 hour or until carrots and potatoes are tender.
