Quick Chocolate Sandwich Cookies

My friend said this recipe won some national recipe contest. Don't know what contest. Anyway, they are sort of like Oreo's. When I made these, they came to about 3 1/2 dozen cookies. The balls were just over 1". I also had a lot of filling left over, but my girls took care of that (lol).

Ingredients

  • cookie:
  • 2 packages of devil's food cake mix
  • 1 cup oil
  • 4 eggs
  • Filling:
  • 1 page (8oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla

Directions

Cookie: In mixing bowl, combine cake mix, oil and eggs; mix well. Roll into 1 inch balls. Place balls 2" aprt on ungreased cookie sheet. Do not flatten. Bake at 350 for 8-10 minutes. Cool for 5 minutes before removing to wire racks. Cookies will flatten as they cool.
Filling: In a small mixing bowl, beat cream cheese and butter. Add sugar and vanilla, beat until smooth. Spread on the bottom half of cookie, top with remaining cookie. Store in refrigerator.
