Matzah Brie - Dairy or Parve

This is a traditional dish during Chag HaMatzah. I serve it for breakfast mainly but makes a nice evening meal too.

Ingredients

  • 8 eggs
  • 8 sheets of Matzah
  • 1/2 cup of cheese (optional for a parve dish)
  • 5 minced green onions with some top
  • 1/2 tsp dill
  • salt and pepper to taste

Directions

Soak the Matzah in cool water. Meanwhile beat eggs till frothy and add spices and onion. Then drain the matzah and squeezing out excess water. Add to the beaten egg and mix well, it will be lumpy. Fold in onion and egg. Cook on a medium hot skillet. Serve with fresh or dried fruit, left over charoset, or and horseradish.
