Spinach Pasta Salad

Serve warm or cold. Very colorful.

Ingredients

  • 8 oz linguine or spaghetti-cooked
  • 8 oz fresh spinach-cut in strips
  • 2 sm carrots (not baby size carrots)-cut into matchsticks
  • 1 medium red pepper-cut into matchsticks
  • 1 medium yellow pepper-cut into matchsticks
  • 3 T olive oil
  • 1/3 C grated parmesan
  • 1/4 C balsamic vinegar
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 oregano

Directions

Heat medium skillet over med-hi heat w/1 T oil.
Cook carrots & peppers about 5 minutes until tender-crisp.
In large bowl, toss pasta, spinach, parmesan, vinegar, salt, pepper, oregano & 2 T olive oil w/cooked veggies.
Serve immediately. Leftovers are good cold.

Serves 4.
