Impossible Cherry Pie

  • 1 cup milk
  • 2 Tbsp. softened butter
  • 1/2 tsp. almond extract
  • 2 eggs
  • 1/2 cup baking mix or Homemade Baking Mix
  • 1/4 cup sugar
  • 21-oz. can cherry pie filling
  • 1 Tbsp. cold butter
  • 1 cup baking mix or Homemade Baking Mix
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon


Preheat oven to 400 degrees. Grease a 10" pie plate and set aside. In medium bowl combine milk, 2 Tbsp. softened butter, extract, eggs, 1/2 cup baking mix and 1/4 cup sugar and mix well with wire whisk until smooth. Pour into prepared pie plate. Spoon pie filling evenly over top.
Bake at 400 degrees for 25 minutes. Meanwhile, prepare streusel. For streusel, in small bowl cut 1 Tbsp. cold butter into 1 cup baking mix, brown sugar and cinnamon until crumbly. Top pie filling with streusel, return to oven, and bake until the streusel topping is brown, about 10 minutes longer. Cool. Refrigerate any remaining pie.
