This is Yossi's favorite salad and he said I should make sure everyone has it soooo I told him I would post it here and at the zaar. LOL Saturday was his birthday and required for dinner with lasagna.

Ingredients

  • 4 bunches of parsley cleaned, trimmed, and washed
  • 1 cucumber
  • 2 roma tomatoes
  • The juice of one lemon plus to taste
  • 1 bunch fresh mint (if you can't get it use two mint tea bags)
  • 1/4 cup bulgar
  • 1/2 cup warm broth or boullion
  • 1/4 or so of Olive oil
  • 1 teaspoon of kosher salt

Directions

Bring the broth to a boil and pour over the bulgar wheat. Set to the side. Place the 1/2 the parsley and 1/2 the mint into a food processor and chop coursely. Then do the rest of the parsley and mint. Place into a salad bowl. Seed and peel the cucumber and mince into 1/4-1/2 inch pieces. Place them into the salad bowl. Mince the tomatoes. Add to the bowl. Then stir and pour in the lemon juice, oil, and sprinkle with salt. Add the bulgar wheat, stir, and chill.
