I am an eyeballer cook. So I will do my best but for the most part I shake and taste:) I have used left over ham instead of pork chops and green chili enchillada sauce in along with a smaller portion of chili powder and it was still good. However, not traditional;) This is so easy and really yummy on a cold winter night.

Ingredients

  • 32 oz can of hominy corn
  • 4 Pork chops (you could use pork tenderloin and pre cut into cubes)
  • 2 cloves minced garlic
  • 2-3 Tbsp ground New Mexican red chile
  • 1 tsp salt (optional)
  • 5 cups water
  • Garnish
  • Chopped fresh cilantro
  • Diced onions
  • and 4-6 tortillas

Directions

Place pork chops in crock pot and remaining ingredients and cook for 4-6 hours. Once pork chops are thoroughly cooked remove bone and cut into bite size pieces and put back into soup.
You are done!
