Sick Soup

This is a soup I concocted for my son when he had his first real battle with a stomach virus. It is light and you can add water to lighten it more for those tummies that are really uneasy.

Ingredients

  • 1/4 cup diced yellow onion
  • 1 rib celery diced
  • 1 garlic clove pressed
  • 1 carrot diced
  • 1 tablespoons chicken stock (dried)
  • egg noodles of your choice (I choose wide egg, but you can use
  • spaghetti, or elbows, pastini, or even rice if you want)
  • 4-6 cups water
  • butter

Directions

In a sauce pan, saute for a while the onion, celery, garlic, and carrot. Add some butter ( 1 tblspn) and saute until onion is translucent. Add the dry stock and seasonings and saute one more minute. Add about 1/2 cup water and simmer until carrot is a bit soft.
Add 4 cups water and bring to a boil, reduce heat and add a couple handfuls of noodles, return to boil and simmer until tender. Serve with light crackers, ginger ale that is low on bubbles a smile and a prayer.
