Oven-Roasted Veggies

I can't remember who gave me this recipe, but it's an easy vegetable side dish.

Ingredients

  • -10 small unpeeled potatoes, quartered
  • -2 cups whole baby carrots
  • -1 small onion, cut into wedges
  • -1/2 cup canola *or* olive oil
  • -2 tbsps lemon juice
  • -3 garlic cloves, minced
  • -1 tsp dried rosemary
  • -1 tsp dried oregano
  • -1/2 tsp salt

Directions

1. Place potatoes, carrots, and onions in an ungreased 13x9x2 inch baking dish.
2. In a small bowl, combine the oil, lemon juice, garlic, rosemary, oregano, and salt. Drizzle over veggies; toss to coat.
3. Bake uncovered at 450 degrees for 30-45 minutes or until veggies are tender.
