Salsa de Melon (Melon Salsa)

This is okay with chips, but it is REALLY good with pork! This will make about two cups of salsa.


  • 1/4 medium cantaloupe; peeled, seeded and finely diced
  • 1/4 medium honeydew; peeled, seeded and finely diced
  • 1/4 medium red bell pepper, seeded and finely diced
  • 1/2 cup finely diced jicama
  • 1 tbsp minced white onion
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped fresh mint
  • 1 serrano chile, minced with seeds
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt, or to taste


Mix all of the ingredients together in a medium bowl. Cover and chill until cold, about one hour. Serve chilled.
