Rotini Parmesan and Zucchini

I make this as a main dish serves at least 4 with leftovers.


  • 1 1lb package of whole wheat rotini cooked
  • 1/3 cup extra virgin olive oil
  • 3 cups zucchini, sliced
  • 2 cups mushrooms, sliced
  • 1 cup yellow onion, diced
  • 2 Tbsp fresh garlic, diced
  • 1 Tbsp basil leaves
  • 1 Tbsp Oregano leaves
  • 3 cups Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese grated
  • salt and pepper to taste


Preheat oven to 400 degrees. Cook pasta according to package directions. Meanwhile heat olive oil in large skillet and saute zucchini, mushrooms, onions, garlic and spices for 8 minutes. Mix vegetable mixture with hot "al dente" pasta. Put vegetable and pasta mix in a large casserole dish. Top with Mozzarella and Parmesan cheese.
Bake in oven for 10-15 minutes or until cheese melts and browns well.
Remove from oven and serve.
