Grandma K`s Pork and Sauerkraut

This sauerkraut is not bitter at all.


  • 2 Cans sauerkraut, rinsed very well
  • water, to cover
  • 1/2 Pound of butter
  • flour
  • 1 Clove garlic, smashed
  • 1 Can mushroom soup
  • 1 Large sweet onion, chopped
  • Sliced mushrooms
  • Pork roast
  • Salt, to taste


Open sauerkraut and place it into a colander. Run cold tap water over it for at least 3 to 5 minutes. Make sure that the sauerkraut is well rinsed. Salt pork to taste and flour it. Melt butter in a Dutch oven. Saut onion and garlic while browning roast. Add sauerkraut, soup, mushrooms and enough water to cover the pork roast to the Dutch oven. Heat on medium high until just about to the boiling point. Lower heat to medium low. Simmer for 3 hours.
