Carrot-Cheddar Casserole

*Add time for having to cook the carrots first*
Mash drained carrots easily by whirling in blender with eggs and milk.

  • 3 c. cooked, mashed carrots (about 1-1/2 lb)
  • 3 beaten eggs
  • 2 c. milk
  • 1-1/3 c. shredded cheddar cheese
  • 1-1/3 c. crushed crackers (reserve 1/4 c. for topping)
  • 2-3 T. softened butter
  • 1-1/3 t. salt
  • dash pepper
  • 1 T. parsley


-Combine all ingredients in mixing bowl.
-Mix well.
-Turn into greased casserole and sprinkly with reserved crumbs.
-Bake 30 minutes, or until knife inserted in center comes out clean.
