Palak Paneer (quick and easy)

This is not company Palak Paneer, that has tons of ingredients. This is family style quick and easy.


  • 2 1# bags of greens (spinach, collards, mixed greens)
  • 2 T of Peanut oil for wok
  • 3-4 T water
  • 1 tsp each minced ginger and garlic
  • 1-2 T Tumeric
  • 3 T of curry, sweet or hot
  • 1 tsp or 2 whole red dried peppers
  • 1 # Queso Blanco or firm white cheese cubed
  • 1 cup of sour cream
  • 3 sliced green onions


Heat wok or large skillet on high, when hot add the oil and the ginger and garlic. Stir quickly and then add spinach and stir. You may need to add a bit of water to aid the spinach thawing.

When the spinach is thawed and thourghly heated add Tumeric, Curry powder, peppers and stir to blend flavors for around 2-3 minutes. Add cheese, stir, remove from heat. Then add sour cream and green onions and stir. Serve with rice or flat bread as main dish or side veggie.
